Crockpot Chicken Noodle Soup

Easy crockpot Chicken Noodle Soup recipe that will warm you up on a cold winter day and be a family favorite.

Equipment

  • 6 QT or larger Slow Cooker

Ingredients

  • 1.5 lbs. bonless, skinless chicken breast
  • 1/2 small onion finely diced
  • 3 rib celery chopped
  • 3 medium carrots cut into 1/4 inch coins
  • 1/2 teaspoon 1/2 teaspoon dried thyme
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper + additional to taste I season
  • 3 cups uncooked Homestyle Noodles wide egg noodles I have used extra wide noodles also.
  • 7 cups chicken broth or Better Than Bouillon Chicken Base Mix 7 cups of water mixed with 7 teaspoons of Better Than Bouillon Chicken Base if you decide to do this option.

Instructions

  • Add chicken breast to the slow cooker.
  • Next Add the chopped onion, carrots, thyme, salt, and pepper.
  • Add chicken broth or the Chicken base mixture.
  • Cover slow cooker with lid and cook on Low for 4-6 hours or High for 2-3 hours or until the chicken is cooked through and has reached an internal tempture of 165°F. Cooking time can vary.
  • Once the chicken is fully cooked remove it from the slow cooker. Place it in a bowl, and use two forks to shred the meat. Then, add it back to the crockpot.
  • The last step is to add the uncooked homestyle noodles and mix well. Cover with lid and cook for 10-15 minutes or until the noodles are al dente. Keep a close eye on them so you don't overcook them. You can also make your noodles on the stovetop and add them to the crockpot.

Notes

Storage
  • Store: If you have any leftover chicken noodle soup keep it in the refrigerator for up to 5 days in an airtight container. 
  • Reheat: To warm your leftover soup, add it to a saucepan or in a microwave bowl. Since the noodles soak up the broth, you will most likely have to add more broth to the soup.
