It’s soup season here in our house. My chicken noodle soup is comforting, nourishing, and perfect for a cold winter day. This recipe is an easy homemade soup made in the crockpot. There is just something about homemade soup that warms the heart. Am I right?!
I originally made this soup recipe in my Instant Pot but knew I needed to adapt it for the slow cooker. I love a good slow cooker recipe, especially for busy nights. Not to mention the aroma that fills your house when making a hearty homemade soup.
Homemade chicken noodle soup is a classic comfort food, particularly in the colder months.
Chicken Noodle Soup Ingredients
- Chicken: For this recipe, I use boneless, skinless chicken breast.
- Vegetables: Carrots, Celery, and Onion are all you need.
- Chicken Broth: You can use chicken broth, low sodium chicken broth, or Better Than Bouillon chicken base.
- Noodles: For this soup, I like using Homestyle Noodles wide or extra wide. However, any noodle will work.
- Seasoning: Just three ingredients are included in this recipe: dried Thyme, salt, and pepper. That’s it. Makes the recipe super easy.

How to Make Chicken Noodle Soup in the Crockpot
- Add boneless, skinless chicken breasts, vegetables, dried thyme, salt, and pepper to the slow cooker.
- Next, add chicken broth or use Better Than Bouillon chicken base to make the broth.
- Cook on Low for 4-6 hours or High for 2-3 hours.
- Once the chicken is fully cooked reaching 165°F. Remove the chicken breast from the slow cooker. Place it in a bowl, and use two forks to shred the meat. Then, add it back to the crockpot.
- The last step is to add the homestyle noodles and mix well. Cook for 10-12 minutes or until the noodles are al dente. Keep a close eye on them so you don’t overcook them. You can also make your noodles on the stovetop and add them to the crockpot.

Recipe Tips
- Use Better Than Bouillon Chicken Base mixed with water in place of chicken broth. I almost always use this and the flavor is rich and delicious. Again, I have made this both ways and am happy with either one.
- Homestyle Noodles wide egg noodles are my go-to for this recipe. It’s the perfect size and these noodles absorb the flavor.
- Cook noodles separately on the stovetop and add to soup before serving. This just ensures the noodles don’t get overdone. I have made this soup both ways and they have always turned out great.
- Store: If you have any leftover chicken noodle soup keep it in the refrigerator for up to 5 days in an airtight container.
- Reheat: To warm your leftover soup, add it to a saucepan or in a microwave bowl. Since the noodles soak up the broth, you will most likely have to add more broth to the soup.

Crockpot Chicken Noodle Soup
Equipment
- 6 QT or larger Slow Cooker
Ingredients
- 1.5 lbs. bonless, skinless chicken breast
- 1/2 small onion finely diced
- 3 rib celery chopped
- 3 medium carrots cut into 1/4 inch coins
- 1/2 teaspoon 1/2 teaspoon dried thyme
- 1/2 teaspoon sea salt
- 1/4 teaspoon fresh ground pepper + additional to taste I season
- 3 cups uncooked Homestyle Noodles wide egg noodles I have used extra wide noodles also.
- 7 cups chicken broth or Better Than Bouillon Chicken Base Mix 7 cups of water mixed with 7 teaspoons of Better Than Bouillon Chicken Base if you decide to do this option.
Instructions
- Add chicken breast to the slow cooker.
- Next Add the chopped onion, carrots, thyme, salt, and pepper.
- Add chicken broth or the Chicken base mixture.
- Cover slow cooker with lid and cook on Low for 4-6 hours or High for 2-3 hours or until the chicken is cooked through and has reached an internal tempture of 165°F. Cooking time can vary.
- Once the chicken is fully cooked remove it from the slow cooker. Place it in a bowl, and use two forks to shred the meat. Then, add it back to the crockpot.
- The last step is to add the uncooked homestyle noodles and mix well. Cover with lid and cook for 10-15 minutes or until the noodles are al dente. Keep a close eye on them so you don't overcook them. You can also make your noodles on the stovetop and add them to the crockpot.
