Have you ever tried a Snowball cookie? You might also know it as a Russian Tea Cup or Mexican Wedding Cake. If your answer is no, then here is your chance. Today I am sharing my recipe with you along with 40+ other cookie recipes from some of my blogger friends.

So you may be wondering what exactly is a Snowball cookie, Russian Tea Cup or Mexican Wedding Cake? It is a shortbread, buttery type cookie that I really love. They are so yummy! My little sassy pants Natalie helped me bake today. I have fond memories of baking with my Grandmother when I was little. We would both put on our aprons and bake for hours.
After cookies are coated with the powdered sugar let cool on cooling rack.
Snowball Cookies
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 2 sticks of unsalted butter softened
- 1 cup chopped almonds Add to food processor and blend until flout like consistency.
- 4 tsp. vanilla extract
- 1/2 cup powdered sugar
- 1 cup powdered sugar While the cookies are baking add powdered sugar in a large bowl for rolling cookies in after they finish baking.
Instructions
- Preheat oven to 350 degrees.
- Mix flour and salt and set aside.
- Add almonds to the food processor and process until a finely coarse like flour is made. Set aside.
- In a stand mixer or using a hand mixer, cream together butter, powdered sugar and vanilla until fluffy.
- Next gradually add flour and salt mixture.
- Then add the finely ground almond mixture.
- Beat until it is mix well.
- Roll dough into balls about 1 Tablespoon and place on cookie sheet lined with parchment paper or a silicone baking mat. (You can use a measuring spoon.)
- Bake at 350 degrees for 14-15 minutes or until the bottoms are a light golden brown. You do not want to over bake the cookies so keep an eye on them.
- While the cookies are baking add powdered sugar in a large bowl.
- When cookies are finished take out of oven and let cool for about 4 minutes and then gently roll the cookies in the powdered sugar.
- Place on wire rack and let cool completely.
